Olympic lifting

Kraft had it right with the idea of Shake & Bake. Easy prep and and easy clean up! The only problem is that Shake & Bake is not whole 30, paleo, clean eating, (the list goes on). I took one of my friends regular dinner meals (Ranch Breaded Chicken) and turned it into a clean eating recipe everyone will enjoy!

Ingredients:

1 pound chicken breast
2 cups almond flour
1/2 seasoning mix

Seasoning Mix Ingredients:

I found a recipe for homemade ranch seasoning from The Pinning Mama site. I adjusted the recipe a little bit for my liking.

3 tsp salt
2 tbsp parsley
4 tsp dill weed
2 tsp dried chives
4 tsp garlic powder
4 tsp onion powder
4 tsp dried onion flakes
2 tsp black pepper
1/2 tsp white pepper

Directions:

Preheat oven to 400 degrees.
Combine all Seasoning Mix ingredients together in a bowl. Place half in a bag or mason jar and save for another recipe (it tastes great with a cup of plain greek yogurt as a veggie dip!)

Whole 30 Ranch Seasoning Mix


Mix the other half of the seasoning mix with the 2 cups almond flour.
Place the almond flour/seasoning mix into a gallon size ziploc bag and add the chicken breast.

Shake it up! It helps if there’s air left in the bag before you close it up. Shake the bag until the chicken is fully coated.
Place the chicken breast in a lightly oiled baking dish.
Pour the left over mixture on top and press into the tops of the chicken.

Paleo Shake and Bake


Bake the chicken at 400 degrees for 30 minutes or until no longer pink. (I usually bake my chicken breast for 30 minutes but these were a little thicker and had to bake for 35 minutes.)

Remove the Chicken and enjoy!
